One of our recent service calls brought us to a restaurant in Naples, FL that was having issues with their commercial flat top griddle. The staff had noticed uneven heating across the surface—one side was barely warm, while the other side was taking way too long to reach temperature. Not ideal for a busy lunch shift.

Diagnosing the Problem

When we arrived, we did a full system check and found that one of the thermostats was completely shot—and the burner ports were clogged up from daily grease buildup. The control knobs were also sticking, making it hard to manage the heat accurately.

Here’s what we did

• Swapped out the faulty thermostat with a new, high-efficiency replacement
• Cleaned and cleared the burner ports to restore full flame
• Tightened and cleaned the controls for smoother temperature adjustmen
• Ran a heat test across the full surface to make sure it cooked evenly
